Orange Bok Choy Salad

📷📷I love quick, easy and refreshing salads that have a bit of a crunch and texture to them!  Changing up my "greens" keeps me from feeling that I am just chewing on tasteless grass, day in and day out. I don't want to get bored or too tired of eating my greens, because they are SO good for you!! You know how it goes... changing things up keeps you wanting more! And that's my goal when it comes to greens! Bok choy is a crisp and crunchy cabbage that is very low in calories and fat, yet it delivers protein and lots of fiber and many vitamins and minerals, which adds up to make it a winner in my book. I love using baby bok choy because it's always more fun to eat things that are cute and small, right?!

I know that since this is a blog post I'm supposed to write pages and pages and share everything I think, eat and dream about when it comes to bok choy. But, honestly, I don't have that much to say about bok choy. I like it, it's good for you, why don't you try some?!Here's a really good recipe! And...  That's all I've got to share about bok choy. So, down to it... the recipe!

Baby Bok Choy Salad

4 small baby bock choy, cut into 1 inch pieces

1/4 cup dried bing cherries (love these... because they don't have any added sugar)

1 orange, cut into pieces

1/4 cup cashews

2 scallions, chopped

(Optional: sunflower seeds)

Dressing:

1/4 cup Avocado oil

2 Tbspn Honey

1/4 cup Apple cider vinegar

Mix salad ingredients together. Whisk dressing ingredients together in a small bowl. Pour over salad, viola! A great side dish to any meal, especially if it is Asian themed!
